Eye Round Roast with Maple Marinade

This easy crockpot recipe is sure to impress even the grumpiest of guests! The maple marinade is delicious and beef is tender. 

Ingredients

  • 2 pound ThorneBrook Farms Eye Round Beef Roast

Marinade

  • 2/3 cup Rice Wine Vinegar or Rice Vinegar
  • 1/2 cup Coconut Aminos or Soy Sauce
  • 1/2 cup Your Favorite Wine or Sherry Vinegar
  • 1/4 cup Maple Syrup
  • 3 cloves Garlic, Chopped
  • 1 tsp Salt

Instructions

  • In a large bowl, mix together all ingredients for the marinade. 
  • Add roast to the marinade and let sit refrigerated for 3 hours (up to overnight).
  • Place roast and pour marinade into crockpot. Cook for 8 hours on low or 6 hours on high. 
  • Slice roast using a sharp knife, making sure to cut against the grain. 
  • Arrange meat slices on a platter. Drizzle juices from crock over the meat.
